Vanilla Chia Pudding with Berries

This chia seed pudding will keep in an airtight container in the fridge for up to five days.It is served cold.No reheating necessary.

Vanilla Chia Pudding with Berries

Servings: 3
Time: 3 hours

Ingredients:

  • 1 1/3 cups Lite Coconut Milk (from the can)
  • 1 tbsp Maple Syrup
  • 2 tsps Vanilla Extract
  • 1/2 cup Chia Seeds
  • 1 cup Blueberries
  • 1 cup Strawberries (sliced)

Directions:

  1. In a medium-sized bowl,whisk together the coconut milk,maple syrup,and vanilla extract.Then whisk in the chia seeds.Place in the refrigerator for 3 hours or overnight.
  2. Divide the chia pudding between bowls or containers and top with blueberries and strawberries.Enjoy!

Berry Baked Oatmeal

This baked oatmeal will keep in an airtight container in the fridge for three to five days.You can also freeze it in individual servings to make it last even longer.Reheat in the microwave or in the oven.

Berry Baked Oatmeal

Servings: 6
Time: 45 minutes

Ingredients:

  • 2 cups Oats (quick or rolled)
  • 2 cups Unsweetened Almond Milk
  • 2 tbsps Maple Syrup
  • 1/2 cup Unsweetened Applesauce
  • 1 tsp Cinnamon
  • 2 tbsps Chia Seeds
  • 2 cups Frozen Berries
  • 1/4 cup Sliced Almonds

Directions

  1. Preheat oven to 350ºF (177ºC).Grease a baking pan with coconut oil.
  2. Add all ingredients except the sliced almonds to a mixing bowl and stir until well combined.
  3. Transfer to baking pan and bake for about 45 minutes or until a toothpick comes out clean.Sprinkle with sliced almonds before serving.Enjoy!

Freezer Veggie Breakfast Burritos

Healthy Breakfasts You Can Meal Prep on a Sunday - Freezer Veggie Breakfast Burritos

These breakfast burritos are protein-packed and keep in the freezer for up to three months.Reheat in the oven at 350ºF (177ºC) for 30 minutes from frozen or less if already defrosted.If using the microwave to reheat,let it defrost,remove the foil and reheat for one to two minutes.

Freezer Veggie Breakfast Burritos

Serving: 12
Time: 30 minutes

Ingredients:

  • 1/4 cup Extra Virgin Olive Oil (divided)
  • 5 cloves Garlic (minced)
  • 1 cup Red Onion (large,diced)
  • 2 Sweet Potato (large,peeled and diced into 1/2-inch cubes)
  • 2 Red Bell Pepper (diced)
  • 2 Green Bell Pepper (diced)
  • 1 tbsp Cumin
  • 1 1/2 tsp Chili Powder
  • 1 tsp Salt
  • 12 Eggs (whisked)
  • 10 Brown Rice Tortillas (11-inches)

Directions:

  1. Preheat oven to 400ºF (204ºC) and line baking sheets with foil.
  2. In a large bowl,combine 3/4 of the olive oil,garlic,red onion,sweet potato,bell peppers,cumin,chili powder,and salt.Toss well and then spread the veggies across the baking sheets in an even layer.Bake in the oven for 30 minutes or until cooked through,gently tossing at the halfway point.
  3. Meanwhile,heat the remaining olive oil in a large skillet over low-medium heat.Pour the whisked eggs into the skillet,and continuously stir to scramble the eggs while they cook.Set aside.
  4. Divide eggs and roasted veggies evenly between the tortillas and wrap into burritos.
  5. Once cooled,wrap the burritos in foil and freeze in a freezer-safe bag.
